Jinvali’s turquoise reservoir, the walls at Ananuri, the Jvari Pass at 2,379 m and Gergeti Trinity sitting under Kazbek. These three carry the most travellers; the full list splits the rest by pace, and by what gets you the last kilometre up to the church.

Out early, stops at the reservoir and the fortress, over the pass, a couple of hours at Stepantsminda and back after dark. The cheapest way to see the whole road.
Up to Gergeti Trinity, not just up to the village
The church sits 2,170 m up a rough track above Stepantsminda. Without the transfer included you are either looking at it from below or walking ninety minutes each way.

Same road, less minibus. These swap the second viewpoint for a valley walk, and they are the ones where the weather actually changes the plan.
In Kakheti the wine still ferments in buried clay.
Qvevri are clay vessels sunk to the neck in the cellar floor, skins and stalks fermenting with the juice — which is why the white comes out amber. A Kakheti day is Sighnaghi on its ridge, the monastery at Bodbe, and as many tastings as you can sit through before the drive home.
Old Tbilisi is a walking city with a cable car in it.
Balconied houses stacked up the hillside, Narikala on the ridge above them, and bread coming out of a clay oven on the way back down. Most of the walks add a tasting; the good ones add a guide who grew up on that hill.

Vineyards are everywhere. Wine buried in clay, a dumpling with a rule for eating it, and a second country close enough for lunch are not.

The winemaking here is the oldest continuous tradition anyone has found, and it still runs through qvevri — egg-shaped clay jars sunk to the neck in the floor of the cellar. Skins and stalks ferment with the juice, which is why the white wine comes out amber and drinks closer to a light red. Kakheti is where most of it happens, and almost every day trip east finishes in somebody’s marani.

Khinkali & Khachapuri
Khinkali are soup dumplings with a twisted knot on top: hold the knot, bite, drink the broth, and leave the doughy stub on the plate. Eating the stub marks you out instantly. Khachapuri is the other half of the argument, and the Adjarian version arrives as a bread boat with an egg dropped into molten cheese. The classes teach both, usually in somebody’s kitchen.

Armenia and Back in a Day
Tbilisi sits close enough to the frontier that a second country is a day trip. The standard run crosses at Sadakhlo for the monasteries at Haghpat and Sanahin, both UNESCO-listed, then Lake Sevan or Dilijan before turning for home. It is a real border: passports out of the bag, and the queue decides the pace of the day.

In Tbilisi, snow and harvest decide half your itinerary.
